Mini Spinach Artichoke Stuffed Wontons

Ingredients

  • 1 cup chopped fresh spinach
  • 1 cup canned artichoke hearts, drained and finely chopped
  • 4 oz cream cheese, softened
  • 1/3 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 24 square wonton wrappers
  • Neutral oil spray for brushing

Instructions

  1. Preheat oven to 375°F and lightly grease a baking sheet.
  2. In a bowl, mix spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until smooth.
  3. Lay out wonton wrappers and place about 1 tbsp of filling in the center of each.
  4. Lightly dampen the edges with water, then fold into triangles or small pouches, pressing to seal.
  5. Arrange on the baking sheet and mist tops with oil spray.
  6. Bake 10-12 minutes, or until edges turn golden and crisp.

Tip

If you want extra crunch, broil for the last 1-2 minutes, but watch closely so the wrappers don’t overbrown.
