Description
Crispy, golden Parmesan roasted potatoes perfect for a warm, festive Christmas side.
Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
3/4 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh parsley (for garnish)
Instructions
1. Preheat oven to 425°F and line a baking sheet with parchment.
2. Toss the halved potatoes with olive oil, Parmesan, garlic powder, thyme, rosemary, paprika, salt, and black pepper until evenly coated.
3. Spread the potatoes cut-side down on the baking sheet for maximum crisping.
4. Roast for 30-35 minutes, or until golden and tender.
5. Let cool for a minute, then sprinkle with fresh parsley before serving.
Notes
For extra crunch, leave the potatoes undisturbed during the first 20 minutes of roasting.
