Description
A cozy Christmas skillet made with tender peas, sautéed mushrooms, and warm holiday flavors.
Ingredients
2 tbsp butter
1 tbsp olive oil
8 oz sliced cremini mushrooms
2 cloves garlic, minced
2 cups frozen peas
1/2 cup low-sodium vegetable broth
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp dried thyme
2 tbsp chopped fresh parsley
Instructions
1. Warm the butter and olive oil in a large skillet over medium heat.
2. Add the sliced mushrooms and sauté 5-6 minutes until lightly golden.
3. Stir in the garlic and cook 30 seconds until fragrant.
4. Add the peas, vegetable broth, salt, pepper, and thyme. Stir and simmer 4-5 minutes until peas are heated through and broth reduces slightly.
5. Remove from heat and stir in fresh parsley.
6. Taste and adjust seasoning before serving warm.
Notes
For a glossier finish, stir in an extra teaspoon of butter at the end.
