Peas with Lemon Butter & Herbs

Description

Tender peas tossed in lemon butter and fresh herbs for a bright, cozy side dish.


Ingredients

2 cups frozen peas

2 tbsp unsalted butter

1 tbsp lemon juice

1 tsp lemon zest

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill

1/4 tsp salt

1/8 tsp black pepper


Instructions

1. In a medium skillet, melt the butter over medium heat.

2. Add the frozen peas and cook for 3-4 minutes until warmed through.

3. Stir in the lemon juice and lemon zest.

4. Add the parsley, dill, salt, and black pepper.

5. Toss gently and cook 1-2 more minutes until the herbs soften and the peas are glossy.

Notes

If you prefer a saucier finish, add 1-2 teaspoons of water or broth while the peas cook.
