Pesto Burrata Crostini with Pine Nuts

Description

Crisp crostini topped with basil pesto, creamy burrata, and toasted pine nuts for an easy, elegant appetizer.


Ingredients

1 baguette, sliced into 1/2-inch rounds

2 tbsp olive oil

1 cup prepared basil pesto

8 oz burrata cheese, torn into pieces

1/4 cup pine nuts

Freshly ground black pepper


Instructions

1. Preheat the oven to 400°F. Arrange baguette slices on a baking sheet and brush lightly with olive oil.

2. Toast for 8-10 minutes, flipping once, until golden and crisp.

3. While the bread toasts, lightly toast the pine nuts in a small dry skillet over medium heat for 2-3 minutes, stirring often. Remove from heat.

4. Spread about 1 tbsp pesto onto each warm crostini.

5. Top with torn burrata, dividing evenly across slices.

6. Sprinkle with toasted pine nuts and finish with freshly ground black pepper.

Notes

Assemble just before serving to keep the crostini crisp and the burrata creamy.
