Description

Tender oven-baked salmon topped with basil pesto for an easy, comforting dinner.


Ingredients

Scale

4 salmon fillets (about 6 oz each)

1/3 cup basil pesto

1 tbsp olive oil

1 tbsp lemon juice

1/4 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat oven to 400°F and lightly grease a baking dish.

2. Place salmon fillets in the dish, skin-side down.

3. Brush salmon with olive oil and lemon juice.

4. Sprinkle evenly with garlic powder, salt, and black pepper.

5. Spoon pesto over each fillet and gently spread on top.

6. Bake uncovered for 12-15 minutes, until salmon flakes easily with a fork.

Notes

Loosely tent with foil for the first half of baking if you prefer extra-moist salmon.
