Description
A fast, cozy chicken and potato soup made with simple ingredients and ready in under 30 minutes.
Ingredients
1 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
3 medium potatoes, peeled and diced
2 cups cooked shredded chicken
4 cups chicken broth
1 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1 cup chopped baby spinach
Instructions
1. Heat olive oil in a large pot over medium heat and sauté the diced onion until soft, about 3 minutes.
2. Add the minced garlic and cook for 30 seconds until fragrant.
3. Stir in the diced potatoes, shredded chicken, and chicken broth, then bring to a gentle boil.
4. Reduce heat, cover, and simmer 12-15 minutes until potatoes are tender.
5. Add milk, salt, pepper, and dried thyme, then warm through on low heat for 2-3 minutes.
6. Stir in the chopped baby spinach until wilted, then taste and adjust seasoning as needed.
Notes
For added creaminess, mash a few potatoes directly in the pot before adding the spinach.
