Roasted Grape & Goat Cheese Crostini

  • 1 cup red grapes, left whole
  • 1 tbsp olive oil
  • 1 tsp honey
  • Pinch of salt
  • Pinch of black pepper
  • 1 small baguette, sliced into 1/2-inch pieces
  • 4 oz goat cheese, softened
  • 1 tbsp chopped fresh thyme (or rosemary)
  • 1-2 tsp balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400°F. Line a small sheet pan with parchment.
  2. Toss the grapes with olive oil, honey, salt, and pepper. Roast 15-18 minutes until soft and lightly blistered.
  3. Lightly toast the baguette slices on a separate pan for 5-7 minutes until crisp.
  4. Spread a layer of softened goat cheese onto each warm toast.
  5. Spoon roasted grapes over the cheese, gently pressing to help them stay in place.
