Shrimp Lo Mein

Description

Cozy shrimp lo mein with saucy noodles, tender shrimp, and crisp vegetables made easily at home.


Ingredients

8 oz lo mein noodles

1 lb large shrimp, peeled and deveined

2 tbsp vegetable oil, divided

1 cup sliced bell peppers

1 cup shredded carrots

3 green onions, sliced

2 cloves garlic, minced

1/3 cup low-sodium soy sauce

1 tbsp oyster sauce

1 tsp sesame oil

1/4 tsp black pepper


Instructions

1. Cook lo mein noodles according to package directions, drain, and set aside.

2. Heat 1 tbsp vegetable oil in a large skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink. Remove and set aside.

3. Add remaining 1 tbsp oil to the skillet, then sauté bell peppers, carrots, and green onions for 3-4 minutes until slightly tender.

4. Stir in garlic and cook for 30 seconds until fragrant.

5. Add cooked noodles, soy sauce, oyster sauce, sesame oil, and black pepper, tossing to coat.

6. Return shrimp to the skillet and toss everything together for 1-2 minutes until heated through.

Notes

For extra saucy noodles, add 1–2 tbsp water or broth while tossing at the end.
