Description
Quick shrimp stir fry with vegetables in a simple savory sauce, perfect for easy weeknight dinners.
Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp neutral oil
1 cup broccoli florets
1 red bell pepper, sliced
1 cup snap peas
2 cloves garlic, minced
1/3 cup low-sodium soy sauce
1 tbsp cornstarch
1/2 cup water
1 tsp sesame oil
Instructions
1. In a small bowl, whisk together the soy sauce, cornstarch, water, and sesame oil until smooth. Set aside.
2. Heat 1 tbsp neutral oil in a large skillet or wok over medium-high heat. Add shrimp and cook 2-3 minutes per side until pink. Remove shrimp and set aside.
3. Add remaining 1 tbsp oil to the skillet. Add broccoli, bell pepper, and snap peas. Stir fry for 3-4 minutes until just tender-crisp.
4. Add garlic and cook for 30 seconds until fragrant.
5. Return shrimp to the skillet and pour in the sauce. Stir and cook 2-3 minutes until the sauce thickens and coats everything evenly. Serve immediately.
Notes
Do not overcook the vegetables to keep them crisp and colorful.
