Simple Vegetable Soup (One Pot)

Description

A cozy one-pot vegetable soup made with simple everyday ingredients for an easy, comforting meal.


Ingredients

2 tbsp olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

1 medium potato, diced

1 zucchini, chopped

1 cup green beans, trimmed and cut

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

1 cup baby spinach


Instructions

1. Warm the olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook 5 minutes.

2. Stir in garlic and potato; cook 2 minutes.

3. Add zucchini, green beans, diced tomatoes, and vegetable broth.

4. Season with thyme, oregano, salt, and pepper; bring to a boil.

5. Reduce heat and simmer 20-25 minutes until vegetables are tender.

6. Stir in spinach just before serving and cook 1-2 minutes until wilted.

Notes

Sautéing the vegetables a little longer adds deeper flavor.
