Skillet Sausage with Cabbage and Carrots

Description

A simple one-pan spring dinner made with beef sausage, tender cabbage, and sweet carrots, cooked until perfectly cozy and flavorful.


Ingredients

12 oz beef sausage, sliced into 1/2-inch rounds

1 tbsp olive oil

4 cups green cabbage, sliced

1 1/2 cups carrots, thinly sliced

1/2 medium yellow onion, sliced

2 cloves garlic, minced

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme


Instructions

1. Heat olive oil in a large skillet over medium heat. Add the sliced beef sausage and cook for 4-5 minutes until browned.

2. Add the onion and carrots. Cook for 4-5 minutes, stirring occasionally, until slightly softened.

3. Stir in the cabbage, garlic, salt, pepper, and dried thyme.

4. Cover and cook for 8-10 minutes, stirring occasionally, until the cabbage is tender.

5. Remove the lid and cook for 2-3 more minutes to allow any excess moisture to evaporate. Serve warm.

Notes

For a brighter spring finish, squeeze a little fresh lemon juice over the skillet just before serving.
