Smoky Sausage & Potato Soup

This smoky, cozy soup is the kind of dinner that warms the kitchen and feels comforting from the first spoonful. Hearty potatoes, vegetables, and savory smoked sausage come together in a simple one-pot meal. It’s easy, filling, and perfect for chilly nights.

Ingredients

  • 1 tbsp olive oil
  • 12 oz beef or turkey smoked sausage, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups russet potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat and brown the sliced beef or turkey smoked sausage for 3-4 minutes. Remove and set aside.
  2. In the same pot, add onion and cook for 3 minutes until soft. Stir in garlic and cook 30 seconds.
  3. Add potatoes, carrots, celery, smoked paprika, thyme, pepper, and salt. Stir to coat.
  4. Pour in chicken broth, bring to a boil, then reduce to a simmer and cook uncovered for 15 minutes until potatoes are tender.
  5. In a small bowl, whisk milk and flour until smooth. Stir into the soup and simmer 3-5 minutes until slightly thickened.
  6. Add the browned sausage back to the pot and stir in shredded cheddar cheese until melted and creamy.

Tip: For extra smoky flavor, use a well-seasoned smoked sausage and don’t rush the browning step.
