Spinach & White Bean Soup

Description

A cozy one-pot spinach and white bean soup made with simple pantry ingredients and fresh greens.


Ingredients

2 tbsp olive oil

1 small yellow onion, diced

3 cloves garlic, minced

4 cups vegetable broth

2 (15 oz) cans white beans, drained and rinsed

1 tsp dried Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

4 cups fresh spinach, roughly chopped

1 tbsp lemon juice


Instructions

1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.

2. Stir in the minced garlic and cook for 30 seconds, just until fragrant.

3. Pour in the vegetable broth, then add the white beans, Italian seasoning, salt, and black pepper. Stir well.

4. Bring the soup to a gentle simmer and cook for 15 minutes, allowing the flavors to blend.

5. Stir in the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and stir in the lemon juice before serving.

Notes

Mash some of the beans in the pot for a creamier texture if desired.
