Description
Tender baked chicken meatballs coated in a sweet chili glaze for an easy, cozy dinner or appetizer.
Ingredients
1 lb ground chicken
1/3 cup breadcrumbs
1 large egg
2 tbsp green onion, finely sliced
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/3 cup sweet chili sauce
1 tbsp soy sauce
1 tbsp honey
1 tbsp lime juice
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment.
2. In a bowl, mix ground chicken, breadcrumbs, egg, green onion, garlic powder, salt, and pepper until just combined.
3. Roll the mixture into 1-inch meatballs and place on the baking sheet.
4. Bake 16-18 minutes, or until cooked through.
5. Meanwhile, whisk sweet chili sauce, soy sauce, honey, and lime juice in a small pan over low heat until warmed.
6. Toss the baked meatballs in the warm sauce until coated.
7. Serve hot with extra green onion on top.
Notes
Avoid overmixing the chicken so the meatballs stay tender.
