Description

Light and cozy Teriyaki Beef Lettuce Cups with sweet-savory beef tucked into crisp lettuce.


Ingredients

1 lb ground beef

2 tbsp neutral oil

1 cup finely diced onion

2 cloves garlic, minced

1/4 cup soy sauce

3 tbsp maple syrup

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp grated fresh ginger

1 cup finely diced carrot

1 cup finely diced red bell pepper

Butter lettuce leaves, for serving

Sesame seeds, for garnish

Sliced green onions, for garnish


Instructions

1. Heat the neutral oil in a large skillet over medium heat, then add the ground beef and cook until browned.

2. Stir in the onion, garlic, ginger, carrot, and bell pepper, cooking until softened.

3. Add the soy sauce, maple syrup, rice vinegar, and sesame oil, stirring until the mixture is glossy and coated.

4. Simmer 2-3 minutes until slightly thickened.

5. Spoon the warm beef mixture into crisp butter lettuce leaves.

6. Top with sesame seeds and green onions before serving.

Notes

For extra crunch, mix in finely chopped water chestnuts right before simmering.
