Vanilla Bean Panna Cotta with Berry Coulis

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and scraped
  • 2 1/4 tsp unflavored gelatin
  • 3 tbsp cold water
  • 1 1/2 cups mixed berries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes.
  2. In a saucepan, combine heavy cream, milk, sugar, vanilla bean, and seeds. Heat over medium until steaming, not boiling.
  3. Remove from heat, discard vanilla bean, and whisk in bloomed gelatin until fully dissolved.
  4. Pour mixture into ramekins and refrigerate for at least 4 hours until set.
  5. Simmer berries, sugar, and lemon juice for 8-10 minutes until thickened, then cool completely.
  6. Spoon berry coulis over chilled panna cotta before serving.

Tip

For extra-smooth texture, strain the panna cotta mixture before pouring into ramekins.
